  • 1 yellow onion, chopped

  • 1 green bell pepper, chopped
  • ¼ cup tomato paste
  • 3 Tbsp. chili powder
  • 1 tsp. salt
  • 2 tsp. cumin
  • 6 cloves garlic, minced
  • 2 cans (14.5 oz. each) diced tomatoes
  • 1 can (15 oz.) black beans, rinsed and drained
  • 1 cup frozen corn kernels
  • 1 cup cheddar cheese, shredded
  • Fresh cilantro, to serve
  • Sour cream, to serve

Directions:

  1. In large skillet over medium-high heat, cook beef until crumbled and browned. Transfer to slow cooker.
  2. Stir in sweet potato, stock, onion, red bell pepper, green bell pepper, tomato paste, chili powder, salt, cumin, garlic, tomatoes and black beans. Cover; cook on LOW 7-8 hours or HIGH 4-5 hours. At the last 10 minutes of cooking, stir in corn.
  3. Serve with cheese, cilantro and sour cream.

Ingredients:

  • 2 lbs. frozen boneless, skinless chicken breasts
  • 2 Tbsp. chili powder
  • 1 Tbsp. ground cumin
  • 1 Tbsp. garlic powder
  • 2 tsp. coarse salt
  • 1 tsp. ground black pepper
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 2 cans (15 oz. each) chopped tomatoes with green chiles
  • 1 can (15 oz. each) pinto beans, drained and rinsed
  • 1 can (15 oz. each) black beans, drained and rinsed
  • 1 can (15 oz. each) red kidney beans, drained and rinsed
  • 4 cups chicken broth
  • Cheese, for garnish, optional
  • Onion, for garnish, optional
  • Sour cream, for garnish, optional
  • Cilantro, for garnish, optional

Directions:

  1. In 6-quart or larger slow cooker, combine all ingredients. Cover. Cook on LOW 5 to 6 hours or until chicken reaches an internal temperature of 165°F and is easily shredded.
