We found that the robust potato taste of our kettle-cooked chips called for a bit more vinegar to produce truly satisfying flavor. We start with choice potatoes and slice them perfectly, cooking them in custom kettles, one small batch at a time. Doing so at precisely the right temperature allows them to reach a golden-amber hue.
